KETO SHEPARDS PIE

Fall is here! The air is crisp, the days are shorter, and it’s officially cozy comfort food season. This month, we’re warming things up with a delicious Keto Shepherd’s Pie. Packed with rich flavor, hearty ingredients, and a creamy cauliflower mash topping, it’s the perfect dish to curl up with on a cool evening.

INGREDIENTS:

  • 1 pound ground beef
  • ¼ cup diced white onion
  • 1 16-ounce bag frozen riced cauliflower
  • ½ cup butter
  • ½ cup heavy cream
  • Salt and pepper to taste 
  • ⅛ cup chopped fresh parsley
  • 1 16-ounce frozen chopped spinach
  • ¼ cup olive oil
INSTRUCTIONS
  1. In a frying pan, add ¼ cup olive oil. Brown ground beef with onion. Set aside.
  2. To make the cauliflower mash, add the cream and butter to a saucepan and bring to a simmer. Add the defrosted cauliflower rice and cook until the cream and butter reduce and begin to thicken. Remove from heat and add salt and pepper to taste. With your immersion blender, puree the ingredients until smooth. Set aside. 
  3. In a frying pan, sauté the spinach with olive oil, salt, and pepper.  Set aside.
  4. Layer the ingredients in a casserole dish, starting with the ground beef and spinach and ending with the cauliflower mash.
  5. Broil in the oven on low until the cauliflower mash is browned.

Cook Time: 40 minutes
Total Time: 60 minutes
