Think classic broccoli-and-cheese, but upgraded with a velvety cream sauce and a crispy, pork-rind-Parmesan topping that gives you all the crunch with none of the carbs.

  • 2 cups broccoli
  • 1/2 cup cream cheese
  • 3 tbsp butter
  • 1/2 cup shredded cheddar cheese
  • 1 cup crushed pork rinds
  • 2 tbsp grated Parmesan

Boil 2 cups of broccoli until soft and drain out all liquid. Set aside.

In a pan, add 3 tablespoons of grass-fed butter, a half cup of cream cheese, a half cup of heavy cream, 1 tablespoon of fresh thyme, and salt and pepper to taste. Mix together until everything is melted.

Chop broccoli and add into the cheese mixture.

Transfer mixture into a casserole dish.

Top with cheddar cheese, crushed pork rinds, and grated Parmesan.

Bake at 350°F for 25 minutes.
