Filling
- 1/2 cup room temperature cream cheese
- 1/2 cup coconut oil
- 1/4 cup keto-friendly vanilla syrup (We recommend RX Sugar brand)
- 2 tbsp peppermint extract
- Pinch of salt
Blend until smooth. Using a small ice cream scoop, scoop individual balls onto a sheet tray. Place the sheet tray in the freezer until the balls are frozen.
Chocolate Coating
- 1 bag keto-friendly dark chocolate (We recommend Lily’s Dark Chocolate)
- 2 tablespoons coconut oil
Melt in the microwave or on the stovetop until completely blended.
