Recipe: Keto Maple Crème Brûlée

Ingredients:

Crème Brûlée Custard

  • 4 egg yolks
  • 2 cups heavy cream
  • 1 tbsp RX Maple Syrup
  • 1 tbsp vanilla extract
  • 2 tbsp Swerve granulated sweetener

Whipped Cream Topping

  • 2 tbsp RX Maple Syrup
  • 1 tbsp vanilla extract

Instructions:

1. Preheat and Prep
Set your oven to 325°F (165°C).

2. Mix the Custard
In a bowl, whisk together the egg yolks and vanilla extract until smooth.

In a saucepan, heat the heavy cream and RX maple syrup over medium heat, whisking gently until it just starts to simmer. Remove from heat. Slowly pour the hot cream into the egg yolk mixture, whisking constantly to avoid scrambling the eggs.

3. Bake the Custard
Divide the mixture evenly among 4 ramekins. Place ramekins in a deep baking dish and pour in hot water until it reaches halfway up the sides of the ramekins.

Bake for about 30 minutes, or until the custard is set but still slightly jiggly in the center.

4. Caramelize the Top
Remove ramekins from the water bath and let them cool. Sprinkle ½ tbsp of Swerve over each custard. Use a kitchen torch to caramelize the sweetener until golden and crisp (about 30 seconds).

5. Chill & Whip
Refrigerate the custards for 10–15 minutes, just enough to set. Meanwhile, blend the whipped cream ingredients using an emulsion blender until soft peaks form.

6. Serve
Top each crème brûlée with a generous dollop of whipped cream and a few fresh berries. Spoon, crack, enjoy.
