Keto Spaghetti & Meatballs: A Comfort Food Classic, Reinvented

Few dishes satisfy quite like a plate of spaghetti and meatballs. But if you’re following a keto lifestyle, traditional pasta is off the table—literally. That’s where our in-house chef, Katrina, comes in! She’s created a rich, hearty, and keto-friendly version of this classic dish that keeps all the flavor while skipping the carbs.

This meal is everything you crave: tender, juicy meatballs, a deeply flavorful homemade tomato sauce, and perfectly sautéed zucchini noodles. Best of all, it’s simple to make and packed with nourishing, whole ingredients that align with a low-carb lifestyle.

The Recipe

Homemade Tomato Sauce

A great sauce starts with great ingredients. This one is rich, balanced, and full of Italian flavors.

Ingredients:

  • 1 cup olive oil
  • 1/2 cup white onion, diced
  • 1 tbsp chopped garlic
  • 2 tbsp dried oregano
  • 1 tsp dried red pepper flakes
  • 1 tsp black pepper
  • 2 tbsp kosher salt
  • 2 tbsp tomato paste
  • 90 oz canned whole plum tomatoes (crushed by hand)
  • 32 oz puréed tomato
  • 1 tsp baking soda
  • 2 cups fresh chopped basil

Instructions:

  1. Heat olive oil in a pot over medium heat.
  2. Add onions and garlic, sautéing until onions are translucent.
  3. Stir in oregano, red pepper flakes, black pepper, salt, and tomato paste.
  4. Mix well, then add crushed tomatoes and puréed tomato.
  5. Stir in baking soda and basil, letting the sauce simmer while you prepare the meatballs.

Keto Meatballs

These meatballs are tender, flavorful, and completely keto-approved.

Ingredients:

  • 1 lb 80/20 ground beef
  • 1 cup ground pork rinds (for binding)
  • 2 eggs
  • 1/4 cup Parmesan cheese
  • 2 tbsp Italian seasoning
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp salt

Instructions:

  1. In a large bowl, mix all ingredients together until well combined.
  2. Roll into meatballs of your preferred size.
  3. Drop raw meatballs into the simmering sauce.
  4. Cook on medium-low heat for 1 hour, stirring occasionally. The meatballs should be fully cooked and tender before serving.

Zucchini Noodles (Zoodles!)

A fresh and light alternative to pasta that still delivers the perfect texture.

Ingredients:

  • 2 cups fresh zucchini noodles
  • 1/4 cup olive oil
  • 1 tsp onion salt
  • 1 tsp garlic salt

Instructions:

  1. Heat olive oil in a frying pan until hot.
  2. Toss in zucchini noodles and season with onion salt and garlic salt.
  3. Sauté for a few minutes until slightly tender and hot, but not mushy.

Bringing It All Together

Plate your zucchini noodles, top with generous portions of meatballs and sauce, and finish with:
– Grated Parmesan cheese
– Fresh basil
– A drizzle of balsamic reduction for extra depth
– A swirl of extra-virgin olive oil for added richness
